Southwest Corn Potato Cakes

This flavorful alternative to regular potato pancakes goes well with salsa and sour cream as
a side dish to any Mexican dish or as a lunch or snack accompanied by a tossed salad. My kids
love these cakes as leftovers, topped with grated low-fat cheese and heated for 1 minute in
the microwave.


Ingredients:


Cooking spray

4 quarts water

5 cups russet potatoes, peeled and cubed

16-ounce package frozen corn

1/2 cup sharp cheddar cheese, grated


1/2 cup fat-free cottage cheese

3/4 cup egg substitute (equivalent to 3 large eggs)

1/2 cup green onion, minced (white and green portions)

3 tablespoons red pepper, minced

1/2 cup firmly packed fresh cilantro, chopped

2 tablespoons canned diced green chilies

3 tablespoons yellow cornmeal


2 teaspoons cumin

1 teaspoon salt

1/2 teaspoon ground black pepper


Directions:

1) In a large saucepan, bring water to boil over high heat. Add potatoes, return to boil, reduce heat,
and simmer until tender, approximately 20 minutes. Drain and mash until smooth.


2) While potatoes are cooking, mix well all other ingredients in a large bowl. Add mashed potatoes and blend well.



3) In a non-stick skillet or griddle sprayed with cooking spray over medium heat, place 1/3 cup of potato-corn mixture. Pat down to form a 3-inch patty and cook until golden brown. Flip and cook other side until golden brown, approximately 6 minutes per side. Place in a warming oven while cooking remaining cakes. Batter also keeps in refrigerator for two days. Serve with fat-free sour cream and salsa. Makes approximately 20 cakes.

86 Calories; 16 percent fat (1.5 grams); < 1 gram saturated fat; 18 percent protein; 66 percent carbohydrate; 2 grams fiber.
